DESCRIPTION
Cooking class in Masseria in Polignano a Mare, typical building, surrounded by trulli and ancient olive trees. We are in the perfect location to cook our local dishes, as in the past, when ancient “massaie” (women of the farm) prepared the hand made pasta, according to ancient recipes.
Our chef will welcome us in Masseria, where every guest, young or old, will have a dedicated work surface, equipped with a pastry board, an apron and a rolling pin. Thanks to the chef’s guidance, we learn how to make a great dough (flour, water and yeast), in an easy and fast way, respecting the processing and rising times and the necessary techniques to realize our traditional homemade pasta, for example“orecchiette“, pride and symbol of Puglia and cavatelli, produced in the past already in the Swabian age. At the end of the preparations, our assistant will let us discover the Masseria and we relax in the shade of the olive trees before continuing for lunch.
Lunch is a mix of flavors based on traditional products: “homemade” bread with cheeses from the Itria Valley, bruschetta seasoned with Evo oil, a not-to-be-missed gift from our lands, and followed by the pasta we prepare topped with fresh seasonal sauces. At the table, an excellent “Negroamaro” wine , to greet each other cheerfully and round off the wonderful day spent together.
